Hello…it’s me, not Adele – It’s Criss!

Dajana already warned you in her blog update that I will appear now on this blog with my very first updates and I’m happy she supports my first attempts of writing something for her blog.

I love food, but even more to cook/ bake and I try from now on to make every weekend one post about food – healthy, unhealthy, vegan or meat extravaganza, so basically I try from everything a little bit and show different recipes from all over the world on this blog.

This week I start with a mediterranean salad that I simply call “Pesto Salad”. During the last weeks, my beautiful girlfriend tease you already with a picture of the Pesto Salad so I want to share with you this easy recipe for it, I hope you will like it! 🙂

How many portions you get from this recipe?

– This recipe is for 4 persons or a big salad for a buffet.

Which kitchen tools do you need?:

– Pan, Pot, Knife, Big Bow

 

The ingredients you need:

Basics: Alternatives:
1 Jar “Pesto Rosso” (7oz/200g)   “Pesto Genovese”, but then double the fresh tomatoes
1 Jar Sun-Dried Tomatoes in oil (8.5 OZ/241g) Glass sizes variate a little bit so it can be also more!
1 Package frozen Italian Seasoning (1,7oz/50g) 4-6 Tablespoons dried Italian Seasoning
(1,7oz/50g) Pine Nuts If you can`t find any in local store exchange it for Sunflower Seeds
1 Package Rucola(rocket) (5,2oz/150g)
(17,6oz/500g) Noodles I prefer Farfalle or Penne
(8,8oz/250g) Cocktail tomatoes
Some fresh leaves of Basil
Salt & Pepper
Some Garlic (If you like)

The hardest part of the recipe is to find all of the ingredients needed for the recipe, everything else is super easy! 🙂

  1. Cook Noodles

Put the Noodles in cooking saltwater till they are Al-dente (Have still a little bite), Pour the noodles into a colander to drain the water away and pour over it some cold water so they stop cooking and drain that also away.

      2. Prepare the other Ingredients

First cut the dried tomatoes into pieces (Keep the oil for ad up after step 3 when it seems to dry), then roast the Pine Nuts without oil in a pen. The cocktail tomatoes can be in one piece halved or quartered how you like.

      3. Mix all together

Now put everything in a big Bowl – Noodles, Pesto, Dried Tomato Pieces, Italian Seasoning, Pine Nuts, Arugula, Cocktail Tomatoes, some fresh leaves of Basil and Garlic.
Mix everything together and add some salt and pepper.

      4. Let it rest

For around one hour at room temperature, test the taste and put in case some more salt/pepper or a little bit dried Italian seasoning.

     5. The best part!
